- • Shape the future of hospitality with AI. Nory is on a mission to make restaurants more profitable, sustainable, and human-centric. After raising a Series B led by Kinnevik, we’re scaling fast—70 people across Ireland, the UK, and Spain—and demand is out-pacing our roadmap. We need a Senior AI Engineer to turn cutting-edge research into production-grade systems that thousands of restaurants rely on every day.
- • Own the end-to-end lifecycle of AI agents that forecast demand, automate prep schedules, and surface margin-saving insights. You’ll start with raw data, design retrieval-augmented generation pipelines, fine-tune open-source or proprietary models, and ship containerised services that run 24/7 in AWS. Every line of code you write directly lowers food waste, reduces labour hours, and boosts EBITDA for our customers.
- • Architect scalable, secure infrastructure for LLM inference and agent orchestration. You’ll choose the right mix of GPUs, serverless, and caching layers to keep p95 latency under 500 ms while keeping cloud spend predictable. You’ll implement blue-green deployments, canary releases, and real-time A/B tests so new models reach production safely and roll back instantly if quality drops.
- • Integrate AI into the heart of Nory’s product suite. Partner with product managers to translate operator pain points into agent behaviour specs; work with designers to craft conversational UX that feels native to a busy kitchen; and collaborate with data engineers to ensure every prompt is grounded in clean, timely data. You’ll ship weekly, measure daily, and iterate hourly.
- • Build feedback loops that make our models smarter over time. Instrument user interactions, log chain-of-thought traces, and run offline evaluation suites that quantify accuracy, latency, and cost. When drift appears, you’ll retrain, fine-tune, or swap models—always balancing performance with explainability so restaurant managers trust the numbers.
- • Champion best practices across the engineering org. Run internal guild sessions on prompt engineering, share reusable LangChain templates, and mentor mid-level engineers on MLOps patterns. You’ll help define Nory’s AI strategy, influence the technical roadmap, and raise the bar for how we build, test, and ship intelligent systems.

🎯 Requirements
- • 4+ years shipping production-grade software, with at least 2 years deploying LLM-based or agentic workflows (LangChain, LlamaIndex, CrewAI, etc.)
- • Deep expertise in Python, plus comfort with cloud-native stacks (Docker, Kubernetes, Terraform) on AWS, GCP, or Azure
- • Proven ability to fine-tune open-source models, implement RAG pipelines, and evaluate model performance with offline and online metrics
- • Strong data engineering skills—SQL, Airflow, dbt, or similar—to build reliable, low-latency data pipelines
- • Nice-to-have: experience with real-time optimisation, time-series forecasting, or reinforcement learning in commercial settings
